At lunchtime in Vancouver, most businesspeople want something healthy and fresh that they can eat fairly quickly. At Hawksworth, they also expect refinement and a lot of flavour. So we came up with this Asian-forward meal-in-one, with marinated sablefish and brown rice, kimchi-style carrots, cabbage, and bean sprouts, and a spicy Asian vinaigrette. It hit all the right notes—and resonated well. At the restaurant we also add a tempura-battered egg yolk to tip it over the edge.
